Balsamic Chicken

We all love Balsamic Chicken! Maybe because we love dipping bread in olive oil and balsamic. Regardless, this is a super tasty meal, esp. on a cool and brisk winter night.

Ingredients:

  • Chicken Thighs

  • Salt

  • Pepper

  • 1.5 cups balsamic vinegar

  • 4 cloves garlic

  • 1 Tbsp rosemary

Instructions:

Preheat oven to 450 F. Salt and Pepper the chicken. Heat a skillet until very hot. Sear skin side first until brown. Sear other side of chicken as well. Place seared chicken into the oven for 10 minutes and with an internal temperature of 165 F.

Chop garlic. Place in pan with balsamic vinegar. Boil until sauce is reduced to about 1/3 cup. At the end of boiling, chop the rosemary and add to vinegar sauce.

Brush a small amount of glaze on top of the browned chicken. Broil for 1-3 minutes until the sauce is bubbly and caramelized. Remove from oven and add the rest of the sauce to the chicken. Serve.
