Cottage Cheese Pancakes

These are some of our favorite pancakes! The cottage cheese gives and excellent moistness and flavor, and the cinnamon and nutmeg add special freshness. This recipe is adapted from an old Joy of Cooking book.

Ingredients:

  • Dry Ingredients

    • 1 1/3 cups all-purpose flour

    • 1/3 cup sugar

    • 2 tsp. baking powder

    • ½ tsp. baking soda

    • ½ tsp. ground cinnamon and pinch of ground nutmeg

    • ¼ tsp. salt

    • 1/3 cup walnuts (optional)

  • Wet Ingredients

    • 1 cup milk

    • 1 cup cottage cheese, ricotta cheese or mascarpone cheese

    • 3 Tbls. Butter, melted

    • 2 large egg yolks

    • 1 tsp. vanilla

  • Other Ingredients

    • 2 large egg whites beat to stiff peaks.

Instructions:

Whisk together dry ingredients. Whisk together wet ingredients. Add wet ingredients to dry ingredients and stir until barely combined. Fold in egg whites. The batter will be thick and bubbly like cake batter. spoon and spread batter onto your griddle. You will likely need to cook these longer than most pancakes, and be sure to grease your pan well as these are very difficult to turn. Best eaten hot and fresh!
