Cream Cheese Filled Chocolate Cupcakes

Mom never made cupcakes, except for these! The cream cheese perfectly balances out the chocolate.

Ingredients:

  • Batter

    • 3 cups flour

    • 2 cups sugar

    • 2/3 cups cocoa

    • 2 tsp baking soda

    • 1 tsp salt

    • 2/3 cups vegetable oil

    • 2 tbsp white vinegar

    • 2 cups water

  • Filling

    • 8oz package of softened cream cheese

    • 1/3 cups sugar

    • 1 cup miniature chocolate chips

    • 1 egg

    • 1/8 tsp salt

Directions:

Preheat oven to 350 F.

For the batter combine dry ingredients. Mix in all other ingredients. Set aside while preparing filling.

Combine cream cheese, sugar, egg, and salt. Beat until smooth and creamy. Add chocolate chips and stir.

Fill paper lined muffin cups 2/3 full with batter. Spoon 1 tbps of filling onto each cupcake.

Bake at 350 F for 20-25 minutes.
