Æbleskiver

 Æbleskiver is a classic danish recipe. We would often eat this the morning of General Conference of the Church of Jesus Christ of Latter-day Saints. It is a tradition that Brad carried over with him from his time serving a mission for the Church in Denmark.

Ingredients:

  • 2 cups buttermilk

  • 2 cups flour

  • 1 tsp baking soda

  • 0.5 tsp salt

  • 1 tsp cardamom

  • juice of 1/2 of a lemon

  • zest of 1 lemon

  • 2 tbsp sugar

  • 4 eggs separated

Instructions:

Combine dry ingredients. Combine all wet ingredients except for egg whites. Combine wet and dry ingredients. Do not overmix. Beat egg whites until stiff peaks form. Fold in egg whites. 

Heat Æbleskiver pan and put a dab of butter in each hole. Add big spoonful of batter. Cook until browned on one side. Flip with chopstick, skewer, or knitting needle.

Garnish with powdered sugar. Serve with jams, sugars, syrups, etc. Our favorite is homemade raspberry jam.
