Danish Almond Gift Cake
One of mom’s favorite cakes! This is a delicious almond cake we’d often make on a Sunday afternoon.
Ingredients:
1¾ cups plus 2 tablespoons butter
2½ cups sugar
4 eggs
2½ cups plus 2 tablespoons sifted flour
1 teaspoon baking powder
½ cup warm water
4 teaspoons almond extract
1 cup sliced almonds
Pearl sugar
Instructions:
Heat oven to 375 F. Grease and line two 9-inch cake pans with parchment paper. Cream butter and sugar until fluffy. Add eggs one at a time until light and fluffy, about 7-10 minutes. Sift flour and baking powder, then add to the butter and sugar mixture and alternating with water and almond extract.
Divide batter between two pans. Sprinkle batter with sliced almonds and pearl sugar. Bake 30-35 minutes or until cake test done. When done, convert on wire rack to cool.
