Canning Salsa

Mom got this recipe from Gerilyn Cardon and loved to make it every summer for year round delicious salsa. These instructions may be a tad vague, but that’s how mom’s recipe was, and if you know anything about canning, you can probably figure it out.

Ingredients:

  • 8-10 large onions

  • 32 cups cut tomatoes, peeled

  • 6 anneheim peppers

  • 4-6 jalapeño peppers

  • 2 3/4 cup white vinegar

  • 1/4 cup salt

  • 1/4 cup sugar

  • tobacco sauce to taste

  • fresh cilantro

Instructions:

Cook at low temperature in heavy bottom pan. Simmer for 8-10 hours. Put in boiling bath for 30 minutes.
