Chimichurri Sauce
A strong, delicious sauce to have with beef, especially a chuck roast. Warning: Dragon Breath inbound.
Ingredients:
1 cup packed fresh parsley leaves, preferably flat-leaf parsley
5 garlic cloves
½ cup extra-virgin olive oil
¼ cup finely minced red onion
¼ cup red wine vinegar
2 tablespoons water
¼ teaspoon red pepper flakes
1 teaspoon salt
Instructions:
Finely chop parsley and garlic in a food processor, about 20 one-second pulses. Transfer to bowl and whisk in remaining ingredients. Allow to sit for 30 minutes before serving.
