President Svendsens Famous Frikadeller Meatballs
A classic from Dad’s mission to Denmark. We’d make these every December 23rd, or “Little Christmas Eve”.
Ingredients:
1 1⁄2 pound very lean ground pork-we use 1⁄2 lean beef and 1⁄2 pork
1 medium onion
2 eggs
approximately 1/3 cup Sprite/7up
1⁄2 cup Bisquick or flour
salt and pepper
Instructions:
Puree onion and eggs in the blender, and add this mixture to the ground meat. Add Sprite and Bisquick to the right consistency to form meatballs (you might need more Bisquick). Use a spoon to form meatballs against the side of a bowl in an oval form. Dip spoon frequently in oil to keep mixture from sticking. Fry on 2 or 3 sides in Canola oil until well browned and to temperature. Dip spoon in oiled pan to form new meatball.
